When you’re looking for a quick and easy meal to prepare that you know tastes great but also includes all the elements for a well-balanced dinner or lunch, this Thai Basil Beef Stir Fry is an absolute winner.

💡 What’s the difference between Thai Basil and “normal” basil? In terms of taste, Thai basil has a more licorice smell with a slightly spicy taste compared to Genovese basil (the kind you’d typically find in Italian cooking). It has sturdy, resilient leaves that stand up well to extended cooking times and prolonged heat.

Ingredients

  • 1½ tbsp salt-reduced soy sauce
  • 1 tbsp chilli jam (optional)
  • 500g lean beef (cut into strips)
  • 2 tbsp olive or peanut oil
  • 1 onion, chopped
  • 1 large carrot, grated
  • 200g green beans, thinly sliced
  • 1 red capsicum, chopped
  • ½ cup Thai basil, torn
  • 440g thin egg noodles

Method

  1. Combine soy sauce, chill jam and 1 tbsp water in a small bowl and set aside.
  2. Drizzle beef with 1 tbsp oil and toss to coat.
  3. Heat a wok or large fry pan over high heat. Add beef and stir-fry for 3-4 minutes, until lightly golden and just cooked. Transfer to a bowl and set aside.
  4. Meanwhile, prepare the noodles as directed on the packet. Once cooked, drain (usually takes 8-10 minutes)
  5. Heat remaining oil in the wok. Add onions and carrots. Stir-fry for 2 minutes.
  6. Add beans and capsicum. Stir-fry for a further 2 minutes.
  7. Return the beef to the wok/pan and add the sauce, veggies and noodles. Stir through and cook until hot.

Sprinkle with basil to serve.
